You cannot specify, but if your dealer has one the lot with the same rim style and the tires you prefer they'd most likely switch them out for you. Now on the M850's if you select the HP Cooling and Tire Package, for MY 19 (not sure about 20) you'd get PS4's for sure.

My order for M8 shows

Sonderausstatung

0300 Notrad Euro 294,12 + tax (Germany)

Admittedly a space saver but better than nothing

Cheers

Not sure if you have the car yet but I am wondering where the spare would be. Just sitting in the trunk?

There is no space below the trunk liner...

After the track day I need to order a new set of tires. Do you guys think I can go with one size up (285 front/295 rear) if I go for Cup 2s?

They don't make Cup2s in stock 275/35/20 so that's the only option if I want to upgrade to Streetable Track...

Drivetrain and wheel fitment on an M5 Comp are fine for those tire sizes; I run 285/30/20 front and 295/30/20 rear. The body shape and wheel arches are obviously very different so rubbing would be my only concern.
