Drivers negotiate a turn differently if it features a gravel trap: no margin for taking liberties - violating track limits could result into entanglement with other cars, car damage, loss of track position and possibly even DNF.
In a way, gravel traps improve safety in a precautionary way: the driver is very aware that he (litterally) must steer clear from ending up in a gravel trap, that he must respect the track limits. But, true, once inside a gravel trap, brakes and steering are as good as to no avail anymore, a treacherous situation for the pilot's safety.
