What's the appeal of the extended fuel tank aside from the obvious longer times between fill ups? My dealer actually pushed me away from it saying the tank alone in ~8lbs more plus I will be hauling nearly 60lbs more of fuel after each fill up.

Lol I think you'll find the extended range to be a plus if you're doing country road driving more than track driving. If you don't want 60lbs extra fuel you'd just not fill it up to max capacity, then the penalty would only be 8lbs. 8lbs is negligible.
PCCBs will cut down on unsprung weight which is good, but it'll be about $20k to replace if you mess them up!
