2010s W204 Mercedes AMG C63 coupe with 6.2L naturally aspirated V8. It meets all of your criteria. It just slips into your price range.

The Achilles heel is the cylinder head bolts. These can be changed individually one-by-one without head removal. The M156 engine is loved by all who have them. If you like changing rod bearings, head bolts will be a breeze for you.
