Yes, this way I know everything was done correctly. Only thins I don't do are the 2 things I don't have the tools for. Pressing headset bearings and building wheels. I find that most shops don't know what a torque wrench is which usually results in over tightened fasteners.
Side benefit is that if you ever have a road side issue, or one of your friends does, you know how everything works so you have a good chance of being able to fix it.
